Pasta Maccheroni Calabresi alla Norma
Cooking Time: Recipe 25 mins /Pasta 13 - 15 mins
Serves: 6
INGREDIENTS:
- 500g Squisito Maccheroni Calabresi
- 3 tablespoon of Colavita or Ed'o PURE Extra Virgin Olive Oil
- 2 eggplants chopped into 2cm chunks
- 2 garlic cloves finely sliced
- 1/2 bunch basil leaves
- 1 tablespoon dried oregano
- 1 tablespoon Colavita Capers
- 1 tbsp Colavita Red Wine Vinegar
- 50g grated Ricotta Salata cheese
- 700g tomato sauce
METHOD:
- Cook pasta in plenty of boiling salted water
- Meanwhile, heat oil in a large frying pan over medium heat
- Add eggplants and cook until softened and golden, stirring occasionally
- Add another splash of oil
- Add garlic, capers and dried oregano
- Cook for a further 2 minutes
- Add vinegar and tomato sauce
- Stir gently and simmer on low heat for 15 minutes
- Add grated Ricotta Salata cheese
- Once the pasta is cooked, drain and toss with the sauce.
- Serve and top with grated Ricotta Salata, basil leaves and a drizzle of olive oil.
