The Story of Choucroute Dish:
The story of sauerkraut takes us back to ancient China, before the Great Wall was even built. Workers in isolated villages consumed fermented cabbage, rich in vitamins, to resist the cold and hard work.
When the first barbarian invaders arrived, they discovered cabbage. The recipe thus crossed central Europe at the pace of the conquests of territories. The famous recipe settled permanently in Alsace around the year 451.
Sauerkraut, or "sour cabbage" in German, can be accompanied by tasty pieces of pork and potatoes. From the 19th century onwards, the recipe as we know it, generous and with a slightly smoky taste, took the name of choucroute in France.
